Celebrate the Year of the Rooster at Yàn

Yàn presents 8 signature Chinese New Year set menus, available from 9 January to 11 February

Located at the iconic National Gallery Singapore, Yàn stays true to its traditional roots and serves up authentic Cantonese cuisine with modern day presentations. For Chinese New Year, 8 menus created by Master Chef Chan Kung Lai will feature familiar ingredients and timeless classics prepared for a prosperous festive feast.

Each menu will start with Yàn’s traditional Lo Hei. The restaurant offers both the Prosperity Salmon Lo Hei and the Signature Yellowtail Fish Yu Sheng with Golden Flake in Shun De Style. For the latter dish, the Lo Hei has a base of crispy fried vermicelli, elevated to resemble a majestic tower, symbolising heightened success. The dish is accompanied by ginger, spring onion, crunchy capsicums, finely grounded peanut and finished with fresh slices of yellowtail.

Yàn will launch 2 new dishes to celebrate the Year of the Rooster – the Duet Style Roasted & Szechuan ‘Bon Bon’ Chicken and the Double-boiled Chicken Soup with Black Garlic Sea Whelk. The first dish will serve a full spring chicken prepared in 2 ways. One half will be coated with traditional homemade Si Chuan Ma La spice and shredded while the other half will be aromatically roasted.

Duet Style Roasted & Szechuan ‘Bon Bon’ Chicken

The Double-boiled Chicken Soup with Black Garlic Sea Whelk is brewed for 8 hours, with the black garlic providing richness and intensity to the dish. Black garlic is also regarded as a booster for the body’s immune system.

Another highlight of the set menus is Yàn’s Harvest Pen Cai. This is a 20-ingredient dish featuring premium ingredients such as 4-head abalone, sea cucumber, sliced sea perch fillet and whole conpoy.

The menus range from SGD 118++ per person to SGD 268++ per person. They are available for both lunch and dinner from 9 January to 11 February
2017. On the eve of Chinese New Year (27 January), there will be 2 reservation slots for dinner at 5.30pm and 8.15pm available. Guests can refer to the website for information about the respective menus and make their reservations at reserve@yan.com.sg.
