Make Your Own Yoghurt

Chef-owner Gene Mok of Selfish Gene Café teaches us the art of making homemade yoghurt from scratch.

If you’ve had enough of commercialised yoghurt laden with sugar and unnatural flavourings, why not try making your own with Chef Gene’s homemade yoghurt recipe.

Homemade Yoghurt

Ingredients:

•    1 litre Full Cream milk
•    50 grams Plain Yoghurt (with active cultures)

Equipment:

•    Saucepan
•    Digital Thermometer
•    Measuring Cup
•    6 Glass Jars
•    Cooler Box

1.    Warm milk in a saucepan over medium heat to 90˚C and stir it gently to prevent bottom from burning.
2.    Remove milk from heat and allow to cool between 43˚C to 49˚C, skimming off any skin formed on the surface.
3.    Using a measuring cup, scoop out about half cup of warm milk and mix the yoghurt in. Stir well until smooth.
4.    Pour the milk and yoghurt mixture back into the remaining milk and mix thoroughly.
5.    Pour the yoghurt milk into clean glass jars.
6.    Place jars into a yoghurt maker or cooler box and allow the yoghurt to set for four to eight hours.
7.    Do not agitate the milk as it ferments. Check if the yoghurt has reached the desired consistency and flavour only after four hours.
8.    Remove yoghurt from yoghurt maker or cooler box and refrigerate immediately.
9.    Let yoghurt chill completely and serve with fresh fruits or granola.

This recipe makes six glass jars of yoghurt (170ml each).
