Singapore Airlines celebrates SG50 with Heritage Cuisine
Singapore Airlines serves up iconic Peranakan dishes developed together with Singapore culinary personality Shermay Lee
The ‘Singapore Heritage Cuisine’ menu items will be available across all cabin classes and in SIA’s SilverKris Lounges at the Singapore Changi Airport between July and September to commemorate Singapore’s 50th birthday.
Travellers on Suites and First Class will enjoy wholesome soups such as “Bawan Kepiting” and Pork Rib Soup. Suites, First Class and Business Class customers will be offered signature Peranakan dishes including “Nonya Nasi Lemak”, “Ayam Buah Keluak”, “Nonya Nasi Padang” and “Hokkien Mee Soup” as main courses.
Selected main courses will also be made available for pre-ordering to Suites, First Class and Business Class customers through the Airline’s “Book the Cook” service.
Peranakan favourites such as “Ayam Tempra” and “Nonya Fish Curry” will be included in the Premium Economy Class and Economy Class menus.
To end off the meal, customers can enjoy a nostalgic Singapore dessert – ice cream wafer sandwich, which comes in four flavours: “Bandung”, “Gula Melaka”, “Pandan” and Sweet Corn.
Keeping with the Singapore heritage theme, Krisflyer members accessing SIA’s SilverKris Lounges at Singapore Changi Airport will be served a selection of dishes such as “Chinese Hawker’s style Rojak” and “Nonya Fried Hokkien Mee”.
Understanding Peranakan heritage
The term “Peranakan” means locally-born in the Malay language. The Peranakan group are usually referred to as descendants of early Chinese immigrants who intermarried with the locals in the Malay Archipelago, including Singapore.
The Peranakans have a hybrid culinary tradition that combines techniques and ingredients from Chinese, Malay and European cooking. Peranakan cuisine offers a distinctive taste, imbued with tantalising flavours produced with spices from across the region.
“Peranakan food is a unique blend of Southeast Asian and European cultures that have evolved over centuries into a cuisine that is subtle, sophisticated and complex.” said Ms Shermay Lee.
“It truly reflects our heritage.”
Singapore Airlines and the Singapore Heritage Board are offering customers free admission to the Peranakan Museum in Singapore. Travellers interested in Singapore’s rich Peranakan history and culture can gain entry by presenting their Singapore Airlines boarding passes at the museum. This promotion ends September 2015.
