What’s new at the Oscar’s Sunday Brunch?

Oscar’s at the Conrad Centennial Singapore has re-charged their Sunday brunch with new offerings for diners


Starting in June, look forward to a new outdoor charcoal BBQ serving lobsters and prime cuts of beef, along with homemade sauces such as blue cheese and cognac, thyme veal jus, habanero tomatillo and a special Asian coconut dip.


While we are on the topic of meat, enter the new carving station. The station will feature three different types of roast –  the Conrad Centennial Singapore’s signature roast London duck; Salmon Coubiliac, a Russian-style salmon pie with lemon cognac cream sauce and Filipino lechon de leche, a succulent Spanish suckling pig slow-roasted Filipino-style.


Eggs with Attitude, the buffet’s organic egg station, serves up perfectly poached organic eggs on English muffins. Choices of toppings include lemon-myrtle salmon, foie gras parcels, pancetta, pulled braised brisket, or mullet Bottarga, accompanied with sauces such as homemade passion Béarnaise, hollandaise, guacamole, or cucumber-cilantro-celery-orange salsa.

Diners that top up SGD 30++ can enjoy free-flow of sparkling wine, house red and white wines and draft beer and for SGD 70++, guests get free-flow of champagne, premium red and white wines and Hitachino Nest beers. Both free-flow packages also include customised Gin & Tonics, made by the resident mixologist. Diners can try the Liquid Nitrogen Gin Sorbet, where liquid nitrogen is used to turn the gin concoction into a sorbet.
