Dolce Vita at Mandarin Oriental Singapore gets a refreshed look

The gastronomic Italian cuisine journey continues with Chef de Cuisine Marco Manocchio at a refreshed Dolce Vita

The focal point of the new look for Dolce Vita is a feature wall that offers diners a look into the chef’s world through vertical slit windows. The old decor has  given way to a palette of browns and neutral tones that add to the sophistication of your meal at Dolce Vita. New additions include two stunning black and white tile showpieces that adorn the main dining area, while over at the bar, a stone finish backdrop and black granite countertop further accentuate the restaurant’s luxe character as you enjoy your drink, unwind or settle in for dinner.

According to Dolce Vita, the menu features “authentic Italian fare reinterpreted with creativity, passion and finesse by Chef Marco Manocchio. Premium produce are flown in from Italy, and dishes are created with the finest ingredients of the best quality.” Chef Marco is originally from Rome in Italy.

Highlights of the menu include: 

The Treccia Campana di Bufala, a buffalo mozzarella cheese from southern Italy is made through an elaborate process of spinning, cutting and twisting the milk curd over and over. This results in a delicate sweet taste that is light on the tongue but very flavourful.

Chef Marco has a crowd favourite where he does a different take on the classic Spaghetti Carbonara. His version combines cured Italian pancetta and the rich flavours of pecorino sabayon tossed with black pepper spices.

Another signature menu item is the Tagliata di Manzo, grilled US prime beef bone-in ribeye, served tableside and complete with enticing sides of homemade mashed potatoes, sautéed vegetables, capperata and natural roasting juices.

To end the meal, the Vanilla Panna Cotta is served with pistachio crumble, berries and smoked milk ice cream.

Operations and reservations

Dolce Vita is open daily for lunch and dinner. The restaurant serves brunch on weekends from 12 – 3pm. Reservations can be made by calling +65 6885 3500.
